BRASSERIE DE PAUDEX

Nestled between Lutry and Pully, along the Lavaux road, the Brasserie de Paudex is being reimagined by drawing on the history and identity of the place.

The project takes as its starting point a series of sketches by Géa Augsbourg, a Lausanne-based artist, preserved by the brasserie’s former owners. Depicting scenes of café life, these drawings formed part of the establishment’s décor for several decades and remain an essential part of its memory. Rather than leaving them in the past, the project gives them a renewed presence.

Reinterpreted on a larger scale, the sketches become wallcoverings and form the backdrop to the new brasserie. Their palette enters into dialogue with a deep wine-red tone that envelops the walls and subtly echoes the vineyards of Lavaux.

From the entrance, a large curtain marks the threshold of the restaurant and faces the kitchen pass. The main dining room is organised around several table settings and a generous central banquette, conceived as the convivial heart of the space. A small alcove offers a more intimate atmosphere, its ceiling distinguished by alternating white and wine-red bands that give it a singular identity.

On the walls, an abundant composition of framed artworks extends the imagery of the traditional brasserie, while an imposing pewter counter asserts the character of the place. Large fabric light fittings punctuate the space and accentuate its verticality. The ceiling, painted entirely in black, visually recedes while integrating the technical elements of the ventilation and electrical systems.

The overall composition creates a warm and generous atmosphere, both familiar and contemporary, designed to welcome large gatherings and to accompany the chef Fabrice Hochart’s comforting and generous terroir cuisine.
